1 tbsp coconut flour or 3 T almond flour
1 tbsp vital wheat gluten
1 tbsp butter, melted
1 egg
1 tbsp full fat cream cheese / mascarpone cheese, softened
1/2 tsp baking powder
1/8 tsp baking soda
1 tbsp parmesan cheese (optional)
a pinch of pink Himalayan salt
seasonings of your choice

Directions:
Directions:
Melt the butter in the microwave.
Add all the ingredients in a bowl and mix well.
Transfer the mixture to a microwave safe greased bowl / mug.
Microwave for 90 seconds for a cake like texture or 2 minutes for a bread texture.
Let cool in the mug for a couple of minutes.
Remove from mug and let cool completely on rack.
Slice in half horizontally.
Toast the bread on each side.
