1 12 oz bag of dried black beans
3 Tbsp vegetable oil
1 large onion, chopped
1-3 jalapeno peppers, chopped
6 C cold water
3 Tbsp epazote (optional)
Coarse salt
Pepper
Tabasco

Directions:
Directions:
1. Pick through beans and remove any stones
2. Soak beans overnight in water
3. Drain water
4. In a large pot, cook onion and jalapeno in oil until soft
5. Add in beans, epazote, and water, stir
6. Bring to a boil and reduce heat to a gentle simmer
7. Cover and cook stirring occasionally until beans are tender and most of the liquid has evaporated creating a saucelike consistency. You may need to cook uncovered for a while to evaporate excess liquid
8. Season with salt, pepper, and hot sauce to taste
9. Serve any way you want! Goes great in tortillas with sour cream and guacamole
