Southern Succor Rub

1 TBS ground pepper
1 TBS paprika
1 TBS sugar
1 1/2 tsp coarse salt, kosher or sea salt
1/2 tsp dry mustard
1/2 tsp cayenne

6 boneless, skinless chicken breasts, pounded lightly

Alabama Great White Sauce

1 cup mayo
3 to 4 TBS cider vinegar
1 TBS coarsely ground pepper
1 tsp coarse salt, kosher or sea salt
Pinch of onion powder
Pinch or two of cayenne

Directions:
Directions:
1. Prepare the smoker for bbq, bringing the temp to 200º to 220º.

2. Combine the rub ingredients in a small bowl. Rub the breasts with the mixture and let them sit at room temp for about 20 minutes.

3. Make the sauce, first whisking together the mayo with about 1/2 of the vinegar. Add the remaining ingredients, and 1 TBS of water and whisk until smooth. Spoon out about 1/4 cup of sauce, and mix it with 1/4 cup water to use as a mop.

4. Drizzle the breasts with about 1/3 of the mop. Transfer the chicken to the smoker and cook for 25 to 30 minutes, or until cooked through.

5. Assemble as sandwiches with lettuce and tomato.
