Paul's Infamous PINK Shrimp Recipe

Ingredients: 1 - 2 pounds (or more) wild caught large/jumbo uncooked shrimp 22 ounce bottle of beer (IPA is preferred) Equal amount of water 2 tablespoons Old Bay Seasoning 3 bay leaves per pound of shrimp Lots of crushed ice

Directions:Clean and devein the shrimp leaving the tails on. Heat up the beer with the seasoning and bay leaves in it. Add enough water to match the amount of beer used. When the liquid is at a rolling boil. put in the cleaned shrimp. When it starts to boil again, cook the shrimp for exactly SIX minutes and quickly remove the pot from the stove.
Use a colander to strain the shrimp from the hot liquid and IMMEDIATELY place the cooked shrimp onto a bed of crushed ice. Then completely cover the shrimp with more crushed ice. This quick cooling process makes the shrimp crisp!
We like to add some horseradish to taste to a prepared cocktail sauce to serve with the shrimp. Arrange the shrimp on a platter with a bed of lettuce leaves and put the bowl of cocktail sauce in the middle. Allow a minimum of 5 shrimps per person. They go fast!!!! |

Notes: Prepare this dish approximately 2 hours before you want to serve it. If you are having a large crowd, allow about an hour or two to clean and prepare the shrimp....it's the most time consuming part of the process. P.S. The cleaning goes much faster with a glass of wine or you can cheat and buy frozen wild caught shrimp that have been cleaned and deveined already!
