5 lbs ground round
1/4 cup curing salt
1/4 cup liquid smoke
4-5 slivered garlic cloves
about 2 tsp cumin
about 1 tsp curry powder
about 1 tsp pepper

Directions:

mix together, taste to determine if more spices are needed. (Raw? IDK, that's what it says!)

shape into rolls about 2-3 inches across, and wrap with cheesecloth. place on broiler pan. bake at 250 for 4 hours. refrigerate for 24 hours. enjoy!

I think you could alter this recipe any way you wanted with different flavors and spices. I think I will try adding some ground pork fat to get a better fat ratio.
