1 clove garlic, minced
1 small onion, chopped
2 pork chops, cut into chunks
2 good sized sweet potatoes, cooked, cut into chunks
1 c fresh spinach
2 t soy sauce or favorite Asian sauce
Cooked brown or white rice

Directions:
Directions:
Pour a couple of teaspoons of olive oil into a skillet. Stir-fry the garlic and onions for 5 minutes. Remove from skillet. Add a bit more oil. Add pork and cook until done. Add back the garlic and onions. Add in the sweet potatoes. Stir fry until slightly browned. Add spinach and soy sauce and cook just until spinach wilts.

Serve over rice
