4 boneless chicken breast OR 1 cut up, whole chicken
salt & pepper to taste
flour for dredging
Vegetable Oil for browning
1 onion - cut into long strips
1 green bell pepper - cut into long strips
3 whole garlic cloves - crushed
1 can of mushrooms OR 8 oz. sliced mushrooms
1 28 oz. can diced tomatoes
1 8 oz. can tomato sauce
1 tsp dried oregano
1 tsp dried basil
1/2 tsp dried thyme

Directions:

1. Salt and pepper chicken pieces. If using boneless breasts and they are large, you may want to cut them in half. Dredge chicken pieces in flour.
2. In a large dutch oven, heat oil until hot. Brown chicken pieces in hot oil. Remove to plate to keep warm.
3. In the same dutch oven, add more oil if needed. Cook onion, bell pepper, and garlic until beginning to become tender.
4. Add remaining ingredients and bring to a boil.
5. Turn temperature down and allow to simmer for about 20 minutes. Return chicken pieces to the dutch oven.
6. Cook until chicken is very tender. The longer it cooks, the better it is!
7. If more liquid is needed, you may add chicken broth (preferred) or water.
8. Serve over your favorite pasta or wide egg noodles along with a nice garden salad!
