Small package Chocolate Graham Crackers

2 8oz creem cheese, room temperature
¾ cup granulated sugar
2 tablespoons finaly granulated sugar
1 cup heavy cream, as cold as possible
1 teaspoon lemon extract
1 ¼ cup sliced strawberries
½ cup finaly chopped strawberries
3 medium bananas
1 orange

Crush chocolate graham crackers to small peaces and place on bottom of 8 inch spring form. Place 3 inch wide non stick paper arround the form's edge.

In food processor mix strawberries and bananas untill smoth adding fresh squized orange juice.

Place medium mixing bowl and mixer whisk in freezer for about 20 minutes. Then mix heavy cream, sugar and lemon extract till stif peaks form. Don't over mix.

In big mixing bowl, mix cream cheese and sugar until it is smooth (I like leaving some small cream cheese peaces). Add no more than 1½ of the fruit mix and mix on medium speed just to mix well. Fold in the whipped cream until well mixed.

Pour over chocolate graham crackers. Add small layer finaly chopped graham crackers, medium banana and strawberries and pour the rest of the cream cheese mix. Smooth out to make sure the edges are tight. For the top, I like to add thin layer of the strawberry mix so it does not dry out with slices of bananas and strawberries. Freeze. Leave out for about 20 minutes to defrost before slicing. Enjoy!

This is very good all on its own but to splurge even more, I like to add some chocolate fudge and strawberry sauce over it.
