2 large Eggs, separated
¾ cup Sugar
Grated rind (zest) from 2 Lemons
Juice from 2½ Lemons
1½ tsp. Unflavored Gelatin soaked in 2 tbsp. Cold Water
1¼ cups Heavy Cream, whipped
Strawberries for decorating (if desired)

Directions:
Beat egg yolks. Add sugar and beat until fluffy and sugar is partially dissolved. Add grated lemon rind and lemon juice. Dissolve soaked gelatin over hot water and add to yolk-lemon juice mixture. Mix well. Beat egg whites, stiff but not dry. Fold into mixture. Fold in whipped cream. Transfer to a serving bowl and refrigerate overnight. Decorate top with halved strawberries if desired before serving.
