Vary this recipe which usually calls for pineapple and use apricots or peaches. Preheat oven to 325º

1/4 or 1/2 c. butter 1 c. pecan meats, slices or halves of drained canned fruit
1 c. packed brown sugar


1 c. flour 1 Tbsp. melted butter
1 tsp. baking powder 1 tsp. vanilla
4 egg yolks 1 c. sugar
4 egg whites

Melt butter in a skillet, add brown sugar and cook gently; stir until dissolved. Remove the pan from the heat and add pecan meats. Drain Fruit and place slices or halves on bottom of skillet. Cover the fruit with the following batter:

Mix flour with baking powder. Beat egg yolks in separate bowl; add butter and vanilla. Sift sugar in separate bowl. Whip egg whites until stiff but not dry. Fold in sugar, 1 tablespoon at a time, then yolk mixture and flour, 1/4 cup at a time. Bake for 1/2 hour. Serve upside down, after sprinkle the fruit with brandy or rum. May be baked in an 8 x 8 cake pan.
