Directions:
Combine mozzarella cheese and cream cheese in a large bowl. Microwave on high for about 45 seconds, until melted. Remove from microwave and stir together. Return to microwave and cook for about 20 more seconds. Remove and stir again. In a smaller bowl mix almond flour, baking powder, garlic powder and eggs. Combine with cheese mixture and mix together well. Add cheddar cheese and mix. Set out plastic wrap on counter and dust light with almond flour. Pour mixture onto the dusted plastic wrap and warp up into a ball shape. Place dough into the refrigerator for about 20-30 minutes to harden a little. Preheat oven to 425º. Remove dough from refrigerator and cut into 8 equal sized pieces. Grease dark baking sheet with butter. Roll pieces into balls and place on baking sheet leaving room to spread. Bake 10-12 minutes playing close attention around the 10 minute mark as not to burn biscuits. Remove from oven and set on counter to cool before serving.
