2 large ripe Roma tomatoes, finely chopped
2 Tbs. red onion, finely chopped
1 tsp. minced garlic
2 Tbs. olive oil
Salt and pepper to taste
2 ripe avocados peeled, seeded and halved
1/2 cup fresh basil leaves
Balsamic glaze to drizzle (optional)
1/4 cup shaved Parmesan cheese

Directions:
Directions:
Roughly blend tomatoes, onion, garlic, olive oil, salt and pepper to combine all flavors.
Spoon the Bruschetta into avocado halve and drizzle with balsamic glaze.
Top with Parmesan cheese.
Serve immediately.
