4 Boneless Pork Chops
1/4 Cup Vegetable oil
3 Stalks of Celery, chopped
1 Cup Uncooked Rice
1 Can Whole Peeled Tomatoes
1 Cup Frozen Peas
1 Small Jar Spanish Olives
1/2 Cup Water

Directions:
Directions:
Salt and pepper pork chops on both sides. Heat Oil in a large skillet. Brown pork chops on both sides, and remove to a large plate. Add celery and rice to the pan and stir-fry over medium high heat until rice begins to turn golden brown. Add tomatoes to skillet and crush with the back of a wooden spoon. Add water and bring to the boil. Return chops to pan, cover tightly, and lower heat to low and simmer without removing cover for 20 minutes. Add peas and olives and stir in with a fork. cover and simmer for an additional 5 minutes.
