2 pounds new red potatoes
1/3 cup Dijon mustard
2 Tablespoons olive oil
1 clove garlic
1 teaspoon dry Italian seasoning
Salt and pepper to taste

Directions:
Directions:
Leave peel on potatoes. Wash and cut into chunks. Place potatoes into a 13 X 9 baking dish coated with cooking spray. Mix rest of ingredients in small bowl and pour over potatoes. Toss to coat. Bake at 425º for 35 - 40 minutes or until tender and crisp, stirring occasionally.
