2 cups sugar
3/4 cup butter
2 eggs
3 cups sifted all-purpose flour
1-1/2 teaspoons baking powder
1/2 teaspoon salt
1-1/2 teaspoons baking soda
1-1/8 cups buttermilk
1/2 teaspoon vanilla
1-1/2 cups mashed bananas
1 cup chopped pecans, optional

Directions:
Directions:
Preheat oven to 325º. Cream butter; add sugar. Beat in eggs, one at a time. Sift dry ingredients together. Add dry ingredients alternately with buttermilk. Add vanilla and bananas and nuts. Bake in loaf pans (2 large pans or 4 small pans). When bread is done, it will turn loose from sides of pan.
