Ingredients:
Ingredients:
6 cups of fresh fruit (apples, peaches, blackberries, blueberries, etc.)
3/4 cup of sugar
¼ cup of brown sugar
3 tablespoons cornstarch
1 teaspoon lemon juice

Directions:
Directions:
Prep fruit by peeling, cutting, washing, etc. if necessary and place in a large mixing bowl.

Place all remaining ingredients in bowl and gently mix until all fruit is covered. Let sit for 20 minutes.

Pour into prepared pie crust (Refrigerated Pillsbury rolls are my favorite).

Top with 2 Tablespoons of diced unsalted butter.

Place second pie crust roll on top and seal edges. May also cut second pie crust into strips and form a lattice pattern.

Sprinkle coarse sugar on top if desired. Bake at 350º for 45 minutes or until set.

Personal Notes:
Personal Notes:
Recipe works with multiple varieties of fresh fruit. Frozen fruit does not work well as it contains too much water and pie remains watery. Blackberry is Meredith's favorite. Peach is Matt's favorite.
