"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
Ingredients:
2 cups whole wheat flour
6 cups rolled oats
1 cup coconut
1 cup wheat germ
1/2 cup water
1 cup cooking oil
1 cup honey
2 teaspoons vanilla
1 Tablespoon salt

Directions:
Directions:
Combine the first 4 ingredients together in large mixing bowl. Blend together separately the next 5 ingredients. Add blended liquids to dry ingredients and mix thoroughly. Spread out on 2 greased cookie sheets. Bake at 250 for one hour.

Note: I like to add 1 cup of nuts to the dry ingredients.

Note: I (Pam) used to make this all the time for Leigh Ann and Lindy. I was determined to give them a healthy alternative to all the sugary foods I have loved my entire life. I was hoping they would not develop the sugar addiction of the Richardson/Mitchell family. Alas, I failed, but at least I tried!!
