4 croaker
˝ cup lemon juice
Salt and pepper
˝ teaspoon thyme
2 carrots
3 ribs celery
2 small onions
4 teaspoons butter

Directions:
Directions:
1. Sprinkle the fish inside and outside with lemon juice, salt, pepper and thyme.
2. Chop vegetables, and then sauté them in butter. Stuff each fish with vegetables and wrap loosely in foil.
3. Place in coals if cooking outdoors or bake on a cookie sheet at 450° F for 15 to 20 minutes.
