1 Kg Carrots
4 eggs
400 gm flour (Aunt Jemima-If you use another brand take out about 1/2C or the balls will come out too doughy)
350 gm sugar
1 Cinnamon Stick
Lemon Peel
Mazola Oil
Sugar/Cinnamon

Directions:
Directions:
Peel the carrots, cut them into rounds (circles), and place them in a pot of water with a cinnamon stick, a lemon peel, and some salt. Boil the carrots until they are very tender. After they are cooked, drain them in a colander and let them cool off.

In an electric mixer, add the eggs with the sugar and the carrots. Mix very well until they are all liquefied. Slowly add the flour, a few tablespoons at a time, and keep mixing until everything is well blended.

Place a wok halfway filled with Mazola Oil on the stove and let the oil heat enough to fry. After the oil is ready to fry, use two spoons to scoop the batter and slide it to the oil. One spoon scoops and the other slides the dough off. Fry them until they are golden on both sides. You will need to turn them. Scoop them out of the oil into a paper towel to absorb the oil.
In a bowl make a mixture with some sugar and cinnamon (About 1 Cup of sugar to 2 tsps of cinnamon). You can add more or less to your tasting.

Lastly, dunk the balls in the sugar cinnamon mixture.
