1 cup sweetened flaked Coconut plus 1/2 cup toasted coconut for topping
2 cups Half and Half
2 Eggs, beaten
1 (8 ounce) can of Cream of Coconut
3/4 cup Sugar
1/2 cup Flour
1/4 teaspoon Salt
1 teaspoon Vanilla Extract
1 teaspoon Coconut Extract
1 cup Cool Whip topping, thawed
1 (9 inch) pie shell, baked

Directions:
Directions:
In a medium saucepan, combine Half & Half, eggs, sugar, flour, salt and cream of coconut; mix well. Bring to a boil over low heat, stirring constantly until mixture is thickened. Remove from heat and stir in coconut, coconut extract and vanilla extract. Pour filling into the pie shell and chill until firm, about 3-4 hours. To toast coconut for topping, heat over to 300 degrees.Place single layer on cookie sheet and bake 20 minutes. Spread Cool Whip on chilled pie and top with toasted coconut.
