Eggplant Parmesan Recipe

1large eggplant sliced 1/2 inch thick about 8 to 10 pieces.
2 tbsp. oil
1 large 25 oz. jar marinara sauce
2 eggs beaten
1 cup mozzarella cheese
1 1/2 cups panko bread crumbs
1/2 cup shredded parmigiano reggiano
Salt and pepper to taste.

Heat large baking pan in 375 oven.

Coat eggplant in egg and bread crumbs.
spread oil on hot baking pan and add eggplant.
Bake 15 minutes, flip and bake 10 minutes or until golden brown.
Increase heat to 450.
in a greased 8x10 baking dish, add half the sauce, then eggplant and cheese.
Repeat with remaining ending with cheese.
bake 15 minutes until cheese is melted.
