Combine in a small bowl:
1 3/4 cups Flour
2 teaspoons Baking Powder
1/4 teaspoon Baking Soda
1/2 teaspoon Salt

2/3 cup Sugar
1/3 cup Shortening
2 Eggs (well beaten)
1 cup mashed Banana

2 or 3 tablespoons Brown Sugar

1. Preheat oven to 350 degrees.
2. Put sugar, shortening, eggs and banana into a large bowl and stir together lightly then pour flour mixture on top. Use potato masher to grind and mix together until fairly smooth.
3. Pour the batter into an oiled loaf pan. Sprinkle brown sugar over the top if desired.
4. Bake for 60 to 70 minutes. Remove from oven and let rest in pan for 5-10 minutes before removing it to a cooling rack.
