Ingredients:  
2 pounds boneless beef chuck roast, cut into 1 1/2 inch cubes (you can also use stew meat)
1 medium onion, chopped
1 large stalk celery diagonally siced
6 to 8 medium carrots, cut into 1/4-inch slices
6 to 8 large potatoes, peeled and cut into 1-inch cubes
2 Tsp Salt
1 Tsp sugar
2 tsp tapioca
3/4 cut tomato juice



Directions:
Directions:
Put beef in a 11 x 7 inch pan .
Add vegetables to the pan
Blend salt with sugar and tapioca sprinkle over beef and vegetables
Add tomato juice
Cover tightly with foil. Bake at 250 º for 4 hours
May add potatoes during last hour of cooking.

Note: I mix everything including potatoes and cook all day in my slow cooker. Very good.
