Crust
1 cup unsalted room temperature butter
1/2 cup white sugar
2 cups flour
1/8 tsp salt

Filling
6 extra large eggs at room temperature
3 cups white sugar
2 tbsp. grated lemon zest (4-6 lemons)
1 cup lemon juice
1 cup flour
confectioners sugar for dusting

Directions:

Preheat oven to 350º

Crust
Cream the butter and sugar until fluffy in a bowl with an electric mixer (paddle attachement if you have)
Combine flour and salt and mix.
Add butter and mix until just combined.
Dump dough onto a floured board and roll into a ball.
Flatten dough into a 9 x 13 pan with floured hands (so it does not stick to you). Build up the side appoximated 1/2 and inch. Chill till fully cooled.

Bake the crust for 15-20 minutes until very lightly browned. Let cool, but leave the oven on.

Filling
Whisk together the eggs, sugar, lemon zest. lemon juice and flour.
Pour over crust and bake for 30 - 35 minutes until the filling is set.
Let cool at room temperature.

Cut into pieces and dust with confectioners sugar.
