1 14-oz bag shredded coleslaw mix

1 large red bell pepper, cored and thinly sliced

1 Granny Smith apple, unpeeled, shredded down to the core with the large holes of a box grater (or cut it up and throw it in the food processor for a few seconds, minus the core)

2 scallions, white and green parts, finely chopped

1 TBSP cider vinegar

1/3 cup plus 1 TBSP buttermilk

3 TBSP light mayonnaise

1/4 tsp kosher salt

1/2 tsp celery seed (optional)

1/4 tsp freshly ground black pepper

Combine the coleslaw mix, bell pepper, apple and scallions in a large bowl. Sprinkle with the vinegar and toss well.

In a small bowl, whisk together the buttermilk, mayonnaise, salt, merely seed and pepper. Pour over the cabbage mixture and mix well. Cover and refrigerate for at least 1 hour and up to 1 day. Serve chilled.
