2 cups plain flour
1 tsp salt
2/3 cup shortening, chilled
6 Tbsp. cold water

Measure flour; add salt; Using pastry blender, cut in half of the shortening thoroughly, until mixture resembles coarse corn meal. Cut in remaining shortening until particles are about the size of peas. Sprinkle water, 1 tablespoon at a time, over small portions of the mixture. With a fork, press the flour particles together as they absorb the water. Do not stir. Use only enough water to hold the pastry together. It should not be wet or slippery. Press all together lightly, with fingers. Bear in mind that the less the dough is handled, the more tender and flaky the pastry will be. Roll out into two pastry shells.

Jean made delicious pies - coconut and chocolate were favorites. Mammie made them as well. Of course we preferred Mammies but they both were wonderful cooks and everywhere they took pies excited people! Lines in potlucks would form at pies first, then the food. Everyone wanted to be sure they got a piece of these delicious pies.
