1 Eggplant, medium
1 Egg, beaten
1/3 C Fine Dry Breadcrumbs
1/3 tsp salt
1/3 tsp pepper
1 (3 oz) Can Seasoned Tomato Sauce
1 tsp Oregano
2 T Parsley, chopped
1/4 C Parmesan Cheese, grated
4-6 slices Mozzarella Cheese or 6 oz grated

Directions:
Directions:
Pare eggplant and cut into 1/2 inch slices. Dip in beaten egg, coat well with breadcrumbs. Let dry a few minutes, then brown lightly on both sides in hot oil. Overlap slices in a 10x6 casserole dish. Sprinkle with salt, pepper, oregano, parsley and parmesan cheese. Top with mozzarella cheese. Pour tomato sauce over all. Bake at 350 for 20 minutes or until sauce is bubbly and cheese melts.
