½ cup oil
½ cup butter
1 egg
1 cup brown sugar
1 tsp. vanilla
¼ cup poppy seeds
slightly less than 1½ cups flour
2 cups oatmeal
1 tsp. baking powder
⅛ cup orange juice, OR a few spoonfuls of concentrated orange juice and orange rind

Directions:
Directions:

Preheat oven to 325º
Mix together oil, butter, egg, sugar, and vanilla.
Beat until light.
In a separate bowl, combine poppy seeds, flour, oatmeal, & baking powder.
Mix dry ingredients into wet mixture.
Add orange juice (or orange juice concentrate & orange rind).
Drop by teaspoon onto ungreased cookie sheet and flatten with a fork
OR: roll dough out onto floured board and cut into shapes.
Bake at 325º for 15-18 minutes or until lightly brown.
Check after 12 minutes of baking, as ovens vary.



Tip from Doreen: Use Demerara sugar for this recipe.
