2 pounds thin Calves Liver with skin removed
1 pound Bacon
2 large Onions, sliced
Milk in bowl
Flour in bowl
Salt & Pepper

Directions:
Directions:
Clean calves' liver and remove outside lining of skin.
Fry 1 pound of bacon.
Set aside cooked bacon.
Reserve half of the bacon grease in a separate bowl for later use.
Fry 2 large thinly sliced onions in the bacon grease.
Set aside the onions & bacon in the oven on warm.
About 15 minutes before your sides are ready (mashed potatoes or grits), soak the liver in milk.
Take the reserved bacon grease and put it back in the frying pan which should be empty with only bacon grease remaining after you cooked the bacon, then the onions in it.
Prepare a bowl of flour, salt, and pepper.
Thoroughly drain the liver coming out of the milk and cover with the flour mixture.
Fry until brown on both sides.
