2 cup Mashed potatoes, Cold
1 cup Salmon, Steamed
1tablespoon Dill, Fresh and Chopped
1 Shallot, Medium Size and Chopped
1 tablespoon Lemon juice
2 tablespoon Green Onion, Chopped
1 Egg
2 tablespoons flour
½ tablespoon Paprika
1 tablespoon Kosher Salt
1 teaspoon White Pepper
1 cup Panko bread crumbs (Japanese bread crumbs)

Directions:
Directions:
1. Cook salmon until done. Panfry, steam, bake, whatever your preference.
2. Cool the salmon in the refrigerator for an hour until dense.
3. Add all ingredients to a large bowl.
4. Fold ingredients together to incorporate well but do not over work.
5. Form mixture into golf ball sized balls and roll in Panko Breading.
6. Deep fry until dark golden. 4 – 5 mins.
