Squash Casserole Recipe

Peel and chop:
3 cups squash
1 large onion.
Add a little water, cook until tender, drain and mash.

1 stick oleo (butter)
1 stack of Hi Ho's (crackers? Ritz?)
1 cup grated cheese.

2 eggs
½ cup milk
salt and pepper to taste

Directions:
Directions:
Melt stick of oleo (butter). When cool, add stack of crushed crackers and 1 cup grated cheese. Mix well.

To squash and onion add:
2 eggs, 1/2 cup milk, salt and pepper to taste. Mix well.
Add 1/2 of crunch mixture. Stir.
Pour into buttered casserole.
Bake 400º oven 20-25 minutes till bubbly. Add remaining crumbs and brown slightly.

You might like to add slivered almonds to the crumb mixtures before browning.

For freezing: Do not brown crumbs on top of casserole till ready to serve.
