¼ Cup chopped onion
1 (10 oz) pkg frozen chopped broccoli. (I used fresh steam broccoli and steamed onions with the broccoli)
¾ cup sharp Cheddar cheese (shredded), divided
1 egg, lightly beaten
½ tsp salt, divided


2 eggs, lightly beaten
¼ cup skim milk or regular
1 (2.5 ounce) jar sliced mushrooms, drained
¼ tsp pepper

Directions:
Directions:
Cook onion with broccoli (omit salt and butter). Drain.
Combine cooked rice, 1/2 cup cheese, 1 lightly beaten egg, and 1/4 tsp salt.
Press evenly over bottom and sides of a 9" pieplate or quiche disch which has been buttered or coated with cooking spray.

Combine 2 eggs, milk, mushrooms, 1/4 tsp. salt, pepper and broccoli mixture. Pour into crust. Bake at 375º for 20 minutes. Remove from oven and sprinkle with remaining 1/4 cup cheese, bake and additional 10 minutes.
Let stand 5 minutes before slicing. (Can be reheated in microwave and is just as good.)
