1 unbaked 9" (10" better) pastry shell
6 slices bacon - fry crisp
Ham - diced small (layer pie shell)
½ c. sliced onion (1 medium)
¼ lb. swiss cheese, diced (swiss colony)
4 eggs beaten
1 c. milk
1 c. whipping cream
½ tsp. salt
⅛ tsp. pepper
Parmesan Cheese

Directions:
Directions:
Prepare pastry shell, line inside with wax paper and fill with dry rice or beans. Bake until almost done. (25 min.)
Remove rice and cool shell.

Saute onion in T. bacon fat until soft. Put cheese, ham, and onion in shell.
Combine beaten eggs, milk, cream, salt and pepper and pour into shell.
Crumble bacon and sprinkle on top.
Bake at 450º for 15 minutes. Reduce to 350º bake 15 minutes or until thin-bladed knife inserted halfway between center and edges comes clean.
Sprinkle Parmesan cheese on top and let stand at least 15 minutes before cutting
