"When I'm at a Chinese restaurant having a hard time with chopsticks, I always hope that there's a Chinese kid at an American restaurant somewhere who's struggling mightily with a fork."--Rick Budinich

1/2 cup pecans
2 1/2 cups Rice Krispies
1 cup chopped dates
1 egg, beaten

Directions:
Directions:
Melt butter and sugar in skillet. Add beaten egg and dates, cook for 2 minutes.

Remove from heat and stir in Rice Krispies and nuts.

Form into balls and roll in coconut quickly. These will harden quickly

Personal Notes:
Personal Notes:
Mom made these often for Christmas. They were very well received and I remember loving them. I have not made them for many many years.

Don't overcook when it says 2 minutes. Otherwise they will harden before you can get them into balls and roll in coconut. Tread lightly, the mixture is H O T when it comes out of skillet, and will burn fingers!
