2 l/4 sifted cake flour
2 l/2 tsp baking powder
1 tsp salt
1 1/2 cup sugar
1/2 cup shortening
1 cup milk
1 tsp vanilla
2 eggs unbeaten

Directions:

Beat well and bake in two 9" round layers at 350 degrees about 25 minutes.

Frost with seven minute or white cloud icing, cover good between layers and on top and sides with fresh grated coconut.(or frozen coconut)

Use this same recipe using fresh strawberries. Slice strawberries in half after washing and drain well on paper towels. Place these close together and all over the cake.

I think I remember Aunt Mabel cutting each layer in half so that she could have 4 layers of icing and fresh berries.

This was my favorite cake growing up. Aunt Mabel cooked for her whole family most every Sunday. This cake, whether using coconut or strawberries, was the hit of the lunch. I still think about it when I see fresh strawberries. I have not made seven minute icing in many years. It tastes a lot like divinity, note the origin of the word. DIVINE.

Aunt Mabel never had an excess of food but somehow we all got fed. Mom would help her get things on the table after church. We did not go down every weekend, but always looked forward for the times we could. Mom and Dad had to work some Sundays at the hospital, so those weekends, meals were eaten at home. I cannot ever remember going to a restaurant on Sundays. Church picnics would have been the only other place we would have eaten.
