1 T olive oil
1 lb ground mild Italian sausage (remove casing if using links)
2 garlic cloves (minced)
26-oz jar marinara sauce
1 tsp kosher salt, divided
1/2 of medium white onion, chopped
1/2 of medium red bell pepper, chopped
1/2 of medium green bell pepper, chopped
4-oz pkg mushrooms, sliced (I prefer baby portobello)
1 c sliced black olives
1/2 c pepperoni slices, diced
16-oz package pasta (rigatoni or other you like)
3 T butter
3 T all-purpose flour
3 c half and half cream
2 c mozzarella, shredded
1/2 c shredded parmesan cheese (not fine-grated)
1/2 tsp freshly ground black pepper
2 c mozzarella cheese, shredded
4 to 8 slices Canadian bacon

Preheat oven to 350º F. Lightly grease a 13-by-9-inch glass baking dish. Prepare pasta according to package directions in a large pot. Heat small amount of cooking oil in bottom of large iron skillet and sauté sausage and garlic on medium-high heat until sausage crumbles (5 to 7 minutes). Remove with slotted spoon, reserve drippings. Drain sausage mixture on paper towel, and put in medium bowl. Stir marinara sauce and 1/2 teaspoon salt into sausage mixture.

Sauté onion, both bell peppers and mushrooms in hot drippings until tender, about 5 minutes. Stir in olives and chopped pepperoni. Reserve 1/4 cup of mixture.

Melt butter in a heavy saucepan over low heat and then whisk in flour until smooth. Cook for 1 minute while constantly whisking. Gradually whisk in half and half; cook over medium heat until mixture thickens and bubbles, about 6 to 10 minutes, whisking constantly. Stir in mozzarella cheese, parmesan cheese, pepper, and remaining 1/2-teaspoon of salt. Pour sauce over pasta in large container and stir to completely coat pasta in cheese mixture. Stir in onion mixture.

Layer the various mixtures in greased dish as follows: pasta mixture over bottom of baking dish then sausage mixture, shredded mozzarella cheese, the 1/4-cup onion mixture and Canadian bacon slices. Bake at 350°F for 30 minutes or until cheese is melted and lightly browned. Let stand 5 or so minutes before serving.
