DRESSING:
1/2 c apple cider vinegar
1/2 c red wine vinegar
1/2 c sugar
2 tsp salt
2 tsp celery seed
2 tsp mustard seed

SALAD:
2 medium green bell pepper (in small, thin strips)
1 small red onion, sliced thin
3 large tomatoes, cut into chunks
1-1/2 medium cucumbers, peeled and sliced thin

Directions:
Directions:
Combine both vinegars with the sugar, salt, and celery and mustard seeds in a small saucepan. Stir and bring to a boil for 1 minute. Set aside. In large glass bowl, combine bell pepper, red onion, and tomatoes. Pour vinegar and sugar mixture over and set aside to cool. Add cucumbers, stir and cover with plastic wrap. Refrigerate for several hours. Use a slotted spoon for serving to drain excess liquid off when serving.
