2 lb package hash brown potatoes, shredded or diced
1 lb sausage (mild or hot depending on your taste)
1 small white onion, chopped
10 large eggs
1-1/2 c cheddar cheese, shredded (extra if want cheese on top)
2-1/4 c milk
1-1/2 tsp dry mustard
1/2 tsp salt
1/2 tsp pepper

Directions:
Brown and drain 1-pound package sausage and onion. Set aside. Line greased 9-by-13-inch glass pan (spray with butter cooking spray) with 2-pound bag hash brown potatoes. Set aside. In large mixing bowl put eggs, milk, 1-1/2 teaspoons dry mustard, salt and pepper. Beat on medium speed 1 to 2 minutes. Stir in shredded cheddar cheese and sausage mixture. Pour into hash brown potatoes in baking dish. Bake at 350º F for 30 to 40 minutes or until a knife inserted in center comes out clean OR cover and refrigerate overnight and next morning bake at 350°F for 40 to 50 minutes. If desired, sprinkle extra cheese on top during last minutes in oven. VARIATIONS: (1) Combine the hashbrowns, cheese and sausage; (2) Use 8 oz diced ham instead of sausage.
