2 lb package hash brown potatoes, shredded or diced
1 lb sausage (mild or hot depending on your taste)
1 small white onion, chopped
10 large eggs
1-1/2 c cheddar cheese, shredded (extra if want cheese on top)
2-1/4 c milk
1-1/2 tsp dry mustard
1/2 tsp salt
1/2 tsp pepper

Directions:
Brown and drain 1-pound package sausage and onion. Set aside. Line greased 9-by-13-inch glass pan (spray with butter cooking spray) with 2-pound bag hash brown potatoes. Set aside. In large mixing bowl put eggs, milk, 1-1/2 teaspoons dry mustard, salt and pepper. Beat on medium speed 1 to 2 minutes. Stir in shredded cheddar cheese and sausage mixture. Pour into hash brown potatoes in baking dish. Bake at 350 F for 30 to 40 minutes or until a knife inserted in center comes out clean OR cover and refrigerate overnight and next morning bake at 350F for 40 to 50 minutes. If desired, sprinkle extra cheese on top during last minutes in oven. VARIATIONS: (1) Combine the hashbrowns, cheese and sausage; (2) Use 8 oz diced ham instead of sausage.
