Dressing:
8 oz feta cheese, crumbled
2 tbsp garlic powder
1 tbsp onion powder
2 tsp Herbes de Provence or similar mixed dried herbs
1 tsp salt
¼ tsp pepper
1 cup olive oil
2 tbsp apple cider vinegar
4-8 tbsp lemon juice

Salad:
Tomato, cucumber, onion
Optional, sliced ham
Lettuce

Directions:
Directions:
Combine dressing ingredients in tightly sealed container. Shake thoroughly. Refrigerate for four hours to let flavors blend, and shake well again before serving.

For salad, coarsely dice tomatoes, cucumbers, onion, add optional ham. Lettuce should be torn in small pieces. Add dressing - not too much - and toss; salad should be moderately dry. Serve in pita pouches.
