1 pound Lentils
1 pound of Smoked Sausage or Cubed Ham (optional)
4 stalks of chopped Celery
1 large Onion, chopped
1 tablespoon Garlic, chopped
Olive Oil
1 pound Elbow Macaroni
Romano Cheese

Directions:
Directions:
Clean and sort the lentils. Place the lentils in a medium pot and cover with water. Bring to a boil then simmer for about an hour. Add meat if using meat. In a separate pan, saute onions, garlic and celery in olive oil. Once translucent, add mixture to the lentils and continue to simmer. Meanwhile, cook the macaroni. Once the lentils are done, add the cooked macaroni to the pot. Spoon into bowls and serve with lots of Romano Cheese on top.
