5 jumbo spoons Flour
5 jumbo spoons Oil
3 Onions, chopped
Garlic, chopped
4 stalks Celery, chopped
Water or Chicken Stock
Chicken, Sausage, Turkey, Shrimp, etc.
Frozen Okra, Green Onions, Parsley, Bay Leaves, Salt & Cayenne Pepper to taste, Filé
Cooked Rice

Directions:
Directions:
Boil water while making the roux. Mix flour and oil in a heavy pot. It is ready when it is the color of a penny. Add the chopped onions, garlic and celery to the roux then add that mixture to the boiling water/stock. Add your meat and bay leaves and cook at least an hour. Add parsley about 5 minutes before serving. When serving, pour the gumbo over cooked rice then sprinkle with chopped green onions and file'.
