French Onion Soup Recipe

3 tbsp. Butter
4 lg. Onions Thinly Sliced
1 tsp. Sugar
2 tbsp. flour
4 c. Beef Broth
1/4 c. Sherry or Red Wine
6 Slices French Bread (1/2 in.thick)
1/4 lb. Gruyere or Swiss Cheese

Melt butter in a large deep pot over medium heat. Add onions and stir to coat. Cover and cook for 15 min until onions are very soft and begin to turn golden brown.

Uncover, increase heat to medium high. Stir in sugar and cook uncovered for 6 to 7 min. Sprinkle with flour and cook 1 min. Stir in broth, sherry and 1 c. water. Simmer uncovered for 5 min.

Heat broiler. Spread bread slices on a baking sheet. Toast to golden brown. Set aside. Place 6 oven safe bowls on a baking sheet. Divide soup evenly into bowls.

Use a vegetable peeler the thinly slice pieces of cheese. Place slice of toast on each serving of soup, top with the cheese. Heat under broiler for 3 min. or until cheese is melted and bubbly. Carefully remove from oven and serve.
