1 c. Shortening
1 c. Sugar
1 Egg
1 t. Vanilla
1/2 t. Salt
1 c. Pumpkin
1 t. Baking Powder
1 t. Baking Soda
1 t. Cinnamon
2 1/2 c. Flour
1 T. Milk

Directions:
Directions:
Cream together sugar and shortening. Add egg, vanilla, and salt. Beat until light. Add pumpkin alternately with sifted dry ingredients. Drop by teaspoon onto ungreased cookie sheets. Bake at 350º for 10 minutes. When cool frost with icing.
 

Caramel Icing

1/2 c. Brown Sugar
3 T. Shortening
4 T. Milk
1 c. Powdered Sugar

Directions:
Directions:
Combine brown sugar, shortening, and milk. Bring to a boil. Boil hard for 2 minutes. Cool and add powdered sugar.
