4 eggs
1/3 cup water
1 cup red hot pepper sauce
2 cups self-rising flour
1 tsp. pepper
house seasoning
2 1/2 pounds chicken, cut-up into pieces
oil for frying

House seasoning:
1 cup salt
1/4 cup black pepper
1/2 cup garlic powder

House seasoning: Mix all ingredients together and store in an air-tight container for up to 6 months.

In a medium size bowl, beat the eggs and water together. Add enough hot sauce until the mixture is a bright orange. In another bowl mix the flour and black pepper together. Season the chicken with the house seasoning. Dip into the egg mixture and then coat well with the flour mixture

Heat oil to 350 in a deep pot. Fry until golden brown and crisp. Cook dark meat about 15 minutes and white meat about 10 minutes
