Penne with Cajun Hot Links and Chipotle Sauce Recipe

2 tbsp. Olive Oil
4 All Beef Hot Links Cut into 6 Pieces
2 c. Heavy Cream
1 c. Chipotle Sauce (Reciepe Follows)
1/2 tsp. Salt
1/2 tsp. Pepper
3/4 c. Parmesan Cheese Grated
1 lb. Penne Pasta
1 Roma Tomato Diced for Garnish
1 tbsp. Green Onion

Chipotle Sauce:
1 c. BBQ Sauce
1/2 c. Olive Oil
1/4 c. Lemon Juice
1 tbsp. Dijon Mustard
1/4 c. Chipotle in Adobo
1/2 tsp. Red Chili Flakes
1/4 tsp Cayenne Pepper
1/4 tsp. Pepper

Combine all ingredients in blender and puree. Cover and refrigerate.

In a large skillet heat the olive oil. When hot add the sausage. Cook sausage until browned on both sides, 4 to 5 min. Add shrimp if wanted. Set meat aside. Lower heat to medium and add the cream, 3/4 c. chipotle sauce, salt and pepper. Add the pasta and 1/2 c. Parmesan. Toss to combine. Reduce the liquid by a quarter then add the meat.

Serve in bowl and garnish with tomato, green onion and remaining 1/4 c. grated parmesan.
