8 carrots
cup reserved cooking liquid from carrots
2 tbsp horse radish
2 tbsp grated onion
cup mayonnaise
tsp each salt and pepper

Directions:
Directions:
Cut carrots into lengthwise strips and boil, reserving some of the cooking liquid. Place cooked carrots in shallow baking dish. Mix the remaining ingredients and pour over carrots. Top with 1/4 cup fine breadcrumbs, 1 tbsp melted butter, and a few dashes of paprika.

Bake 15-20 minutes at 375.
