Fried Green Tomatoes With Red Pepper Aioli Recipe

Red Pepper Aioli:

1/2 c. Mayo
1/4 c. Roasted Red Peppers Drained
1 Clove Garlic Minced


2 lbs. Green Tomatoes
1/2 tsp. Salt
1/3 c. Flour
2 Large Eggs
2/3 c. Cornmeal
2 tbsp. Grated Parmesan Cheese
1/2 tsp. Pepper
Pinch of Cayenne Pepper
7 tbsp. Oil for Frying

Combine mayo, red peppers and garlic into mini chopper. Process until well combined. Transfer to small bowl and refrigerate until ready to serve.

Core tomatoes and cut into 1/4 in. thick slices. Sprinkle with 1/8 tsp. salt. Combine flour and 1/8 tsp. salt in a shallow dish. Lightly beat eggs in another dish. Whisk together the cornmeal, parmesan, the remaining 1/4 tsp salt, the black pepper and cayenne into another shallow dish.
Coat tomatoes flour mix then egg and then cormeal mix. Heat oven to 200.
Heat oil to medium temp. in skillet. Fry tomatoes for approximately 2 min. Flip over and fry for another 2 min. Transfer to a baking sheet with wire rack for drainage.
