8oz wild rice (not wild rice mix)
4 (10½oz) cans beef broth
1 cup chopped onion
1 stick butter
1 cup sliced mushrooms
1 cup chopped celery
1 cup milk
1 cup chopped green bell pepper
Salt and Pepper to taste

Directions:
Directions:
Cook rice in beef broth, covered, until liquid is absorbed. (one to two hours)
Sauté onion, bell pepper, mushrooms and celery in butter. Combine rice, vegetables, milk, salt and pepper. Pour into casserole dish and bake at 350º for 25-30 minutes. If desired you may want to sprinkle with finely diced red onion and fresh grated Parmesan cheese (heat until cheese melts). This is great with wild meat recipes.
