4 lbs poached bluefish filets, drained (don't trim the red meat off the filets)
4 lbs prepared instant mashed potatoes (equals 12 servings/ half the box)
Chopped fine, and simmered until soft:
1 large onion (2 cups)
5 stalks celery (1 cups)
8 cloves of garlic

Have potatoes, fish, and vegetables cooled until combining ingredients.

3 eggs
1 cup mayonnaise
cup prepared mustard
⅜ cup Worcestershire sauce
cup dried parsley flakes

breadcrumbs, oil for frying

Mix vegetables into potatoes, add eggs. Stir in mayonnaise, mustard, Worcestershire sauce, and parsley flakes. Gently stir in fish last. Mixture should be moist, but not runny. Add breadcrumbs judiciously if mixture is too wet to handle.

Form into small patties, approximately 1" thick by 2 1/2" across. Coat with breadcrumbs. Fry in 1/2 deep oil at 375, turning when underside has been sufficiently browned. Drain on paper toweling; serve hot with lemon slices and tartar sauce.
