1 baked pie crust, cooled
Mix in sauce pan:
1 cup granulated sugar
7-8 tbsp cornstarch
Stir in 2 cups hot water; cook over medium heat until boiling, continue to cook until mixture begins to thicken.
Add 4 slightly beaten egg yolks (after tempering yolks with a small amount of the sugar mixture)
Continue to cook/boil until thick. Add 3 tbsp butter. Stir in - cup lemon juice; to preferred taste.
Stir in zest of 4 lemons

Pour into baked pie shell.

Make Meringue:
Beat 4 egg whites. Add tsp cream of tartar. Add cup powdered sugar and one tsp of vanilla. Beat until stiff peaks form; spread on pie. Bake/broil for approximately two minutes until meringue peaks are lightly browned.

Chill/serve.
